Soy-Oats Sugar Cookies Recipe-Cookies with Soy Flour

Weekend breakfasts are mostly lazy affairs for which normall I make an omelette or scrambled eggs or have just toast with kothamalli chutney. But when Rajitha inspired us to think about a soy breakfast, I started thinking of what I could make and finally settled on some low sugar cookies. I had these warm cookies on a Sunday morning with a hot cup of chai.

Soy-Oats Sugar Cookies Recipe

What I Used:

Makes 8-10 cookies

Soy flour – 1 cup
Maida – 1/3 cup
Oats – 1/4 cup
Butter at room temperature – 3/4 cup
Powdered sugar – 1/2 cup (this makes the cookies mildly sweet, so you can adjust according to your taste)
Cinnamon powder – one pinch (optional)
Salt – one pinch

How I Made It:

1. Sift the maida and soy flour with salt until its totally blended.

2. Mix the butter and sugar with cinnamon powderand then add the flour to form a loose dough. Then mix in the oats gently.

3. Roll out gently and cut with a cookie cutter in desired shapes. I don’t have cookie cutters so I made small balls of the dough and flattened it on my palm.

4. Lay on a greased tray and bake in a pre-heated oven for 15-18 mins, until the edges are golden brown.

Enjoy with a hot cup of coffee/milk/tea.

    oh, the cookies look so good!!! Love the mild color… and I am still in search of a dish w/ papaya :(. Had thought of a couple of them, but someone else had already made it! So, i’m still looking 🙁

    lovely cookies Nags – adding soy flour is so healthy too…saw some Soya nankhatai recipe in Tarla Dalal book, and that too only 2 tbsp of butter, i’m wondering if they’ll come out alright…
    Cookies and milk is my kinda breakfast 🙂

    Those can’t get any healthier with soy and oats girl!! very nice, I haven’t seen soy flour here though…might have to check:)

    Nagu, sra just announced Pomegranate for AFAM!! AHH!! Another fruit I don’t get but I will go to Asian store this weekend and try to get both of them.
    I will make something for you with Papaya. Even if I post after your deadline, you can always add to your round up. Hope it’s okay!:)

    It does look good. And with soya that have to be a bonus.
    I have never made anything with soya flour.
    Sometimes i use soy milk, not for cooking just for my daughter.
    I have been looking for papaya for you event. But till now no result.

    These Cookies are healthy!!(fibre,protein and carbo rich)!

    I have to find a recipe that masks the soy too 🙂 ..
    So you take all the pics in the daytime? It is such a big luxury for me… I mostly cook in the night, even during weekends…. I hate those light spots in the pics taken with a flash, I better learn the diffusion process and all those techniques soon… 🙂
