The paneer bread rolls in this site are possibly the most popular recipe I have posted. It’s ironic and funny, I had seen a recipe in a cook book and then made those bread rolls based on my memory.

Those paneer bread rolls then went on to inspire so many food bloggers, online magazines, print magazines, and even newspapers. Although the pictures in that post are not really high quality or beautifully styled, they have been copied and used the most, with and without my permission.

Anyway, I have been making bread rolls with various fillings over the years but hardly ever when I had the time and patience to take pictures of every step of the cooking process. Finally, a few weekends ago I decided to do just that so I can share my second favourite bread rolls – bread potato rolls!

Over the years and many trials, I have perfected the potato filling to my taste and preference. I love the addition of peas, for example, and really browning the onions to an almost burnt consistency because that caramelised taste and texture really stands out as you bite into the bread rolls.

Bread Potato Rolls Recipe

Bread potato rolls, an easy snack recipe if you have some bread slices handy. The spicy potato filling can be put together in a jiffy to make this hot and tasty snack.

Ingredients
  

  • 8 slices of bread
  • 2 tbsp butter

For the filling:

  • 2 cups of boiled peeled, and mashed potatoes
  • 1/2 cup sliced onions
  • 1/4 cup green peas optional
  • 3/4 tsp ginger garlic paste
  • 1/2 tsp chilli powder adjust to taste
  • 1/4 tsp turmeric powder
  • 1/4 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp lemon juice
  • 1 tbsp oil
  • Salt to taste

Instructions
 

  • Boil the potatoes either by pressure cooking them or steaming them until soft
  • Peel, mash, and set aside 2 cups
  • If you plan to add green peas, place 1/4 cups in a microwave-friendly container, add enough water to cover it, and microwave on high for 2-3 mins or until cooked. Set aside.
  • Heat 1 tbsp oil in a pan and add the 1/2 cup sliced onions
  • Fry until light golden brown and the edges brown a bit
  • Add all the spices - 3/4 tsp ginger garlic paste, 1/2 tsp chilli powder (adjust to taste), 1/4 tsp turmeric powder, 1/4 tsp cumin powder, and 1 tsp coriander powder
  • Fry until the spices are roasted and the onions turn a dark golden brown
  • Add the peas and mashed potatoes
  • Mix well, add salt and lemon juice, and mix again
  • If you have some coriander leaves handy, chop some and throw them in
  • Mix again well and set aside to cool down
  • Meanwhile, remove the crust from the bread slices
  • Using a rolling pin, roll each bread slice as flat as possible
  • Place 1-2 tsp of the potato filling on one end and roll tightly inwards
  • Place some water along the other edge and seal
  • Place sealed side down so the rolls won't open
  • Proceed with the remaining bread slices and filling
  • Spread a generous amount of butter on the rolls
  • Toast the bread rolls until nicely browned and crisp outside
  • Serve bread potato rolls hot with ketchup

Notes:
Leavened pre-sliced soft bread works best for this recipe so it will be flexible and malleable to be filled and rolls
You can add tomatoes to the onion mixture and cook it well
Instead of green peas, you can also add corn
Some chopped cashew nuts would taste fabulous in the filling too

    These are great as snacks – parties – appetizers. Been Making a long time using different fillings. Like Mexican taco filling with mashed taters or just a thicker pasty taco filling. GET CREATIVE in UR Fillings. Make them spicy or mild. Think Itilian – Cajun – shrimp or lobster chopped into a muxture ñ roll. Veggies cut ñ cooked semi crunch. Hj

    Tried this yesterday. I added some grated cheddar with the potato and peas filling. Yummy! Great as an evening snack, with hot tea. My husband loved it, though he is not a fan of potato fillings. Thank you.

    This is a great idea! And it is interesting that so many people have copied your idea. !!!!! I am so happy for you.

    In America we have cheese sandwiches that are often spread with butter on the outside and fried in a frying pan with no extra oil beyond the butter which helps to toast the bread and to melt the cheese. Some people are now putting mayonnaise on the outside to help toast the bread. They say it makes a better, more crispy toast. That might be something interesting to try with your interesting recipe. Also, another idea I had for you was once you have the butter on the outside of your bread rolls, put them in the oven to toast them.
