Rich Dark Chocolate Cake Recipe

I am a self-confessed chocolate addict. I still remember feeling angry that people only seemed to give away fruit cakes during xmas cuz I was not too fond of them. But without fail, Omana Aunty, (Mrs. Omana Paul is a well-known caterer in Kottayam) our neighbour, used to send one chocolate cake. Rich, dark and absolutely yummy. This is her recipe and my mom makes it whenever she gets the chance and is in the mood.

RICH DARK CHOCOLATE CAKE RECIPE


Ingredients:
Plain flour or maida – 300 gms
Powdered sugar – 450 gms (Please measure after powdering)
Butter – 290 gms
Milk powder – 20 gms
Curd – 8 oz (250 ml)
Cocoa powder – 70 gms
Eggs – 5 big
Salt – 1 pinch (if using unsalted butter)
Baking soda – 1 tsp
Vanilla essence – 2 tsp

How to Make Chocolate Cake:

Sieve soda + maida + cocoa powder + milk powder + salt six times. This is to make sure that the ingredients have blended completely.

Beat the curd well to remove any lumps.

Beat sugar and butter, keep adding one egg at a ttime and keep mixing well. When this batter has blended well, add the vanilla essence.

Alternately add the curd, and the powder mixture to the butter and sugar mixture. Do not beat at this stage. Slowly blend the ingredients and keep mixing well.

Once the batter has blended well, grease a tray and bake in 350 degrees heat. It should take 35-40 minutes to be completely done. We use the conventional oven at home. Please check after 25 minutes if you use a different one.


Optional Butter Icing:

Mix 30gm butter and 80gm castor sugar and spread over the cake.

Tip* – Sometimes we found that the deep colour is missing in our cakes than the ones sent by Omana Aunty. So we started experimenting to find out her secret ingredient that seemed to enhance the colour in her cakes. We zeroed in on one teaspoon coffee powder. So if you feel that your chocolate cake lacks colour, try this tip 🙂

Another tip is to mix the chocolate powder in boiling water before adding to the batter.

    hi, this is d 1st time i came across the usage of curd in baking chocolate cake.is it a substitute for milk?

      not really. it acts as a rising agent in a way when combined with the baking powder or soda

    It might bring grief to you as i bring forth the news that my aunt Mrs. Omana Paul w/o late Commander J.C. Paul passed away day before yesterday at CMC Vellore. The end of an era actually as told by my mom – Long live her legacy !!

      Dipu, I am in Kottayam now so heard the sad news on the day itself. My mom went to see her yesterday before the funeral too. May her soul rest in peace.

    pressure cooker cake recipes are different from regular ones so i am not sure if these will turn out good.

    Hello!! First, I would like to say that I love chocolate cakes and it surely looks yummy!! Can I bake this in a pressure cooker? Will it turn out as in the oven or I'll have to modify?

    Newbie, two reasons I can think of for that. Either the batter was too thick or the oven was too hot on top. My oven has the same issue so I cover lightly with aluminium foil before baking my cakes 🙂

    Hi. I am a newbie at baking and yours was the first chocolate cake recipe I have ever tried. It tasted excellent and was moist. But the top crust was thick and spilt open. Inner part cooked okay. Is it coz my cake tin was too small(i use 6 inch tin) or coz my batter was too thick? Please help. Same happened to the butter cake I tried .

    Nina – ah ok. Honestly I use a very old-fashioned oven which I brought from India (you can find pics of it in my butterscotch blondies recipe page) so I haven't looked around here for ovens. There are some MW ovens that do the trick too so could try places like Courts maybe?

    I can see that it tastes good!! Do you have any idea what I should use if i want an eggless cake? I don’t think we get egg substitute here! I would love to bake and eat it too, and I dont eat egg waale cakes 🙁
