Simple Vegetable Rice Recipe - Vegetable Rice Recipe

On most days, I end up making a simple vegetable rice recipe which is mixed rice with some vegetables and minimum spices. It's an easy one pot meal option for bachelors (and bachelorettes like me) who don't want to spent too much time in the kitchen or don't have fancy equipment to cook. This recipe is a standard one I use on most weekends with minimum variations.

It was Saturday, a break after a hectic week. I had carrots and beans in the fridge, and a packet of frozen peas. Was too tired to go grocery shopping so decided to make do with rice with vegetables in it. Simple and nutritious lunch.

Simple Vegetable Rice Recipe

What I Used:
Basmati Rice - 1 cup
Carrots - 2
Beans - 8-10
Peas - 1/4 cup
Onion - 1 medium
Ginger garlic paste - 1 tsp
Garam masala - 1 tsp
Jeera powder - 1/2 tsp
Pepper powder - 1tbsp
Salt - to taste

How to Make Vegetable Rice:
1. Wash and drain the rice and soak in water for 30 mins.
2. Fry chopped onions and ginger garlic paste in oil, in the pressure cooker pan.
3. When onions turn transparent, add the garam masala and jeera powder. Fry for another minute.
4. Add the vegetables and mix well. Then add the rice, salt and fry for 2 mins.
5. Add 1 cup water, wait for a whistle, remove cooker from fire and wait till the pressure leaves.
6. When warm itself, add the pepper powder and mix well.

This vegetable rice is easy and very flavourful. I had it with papad and raita.
