Simple Vegetable Rice

I don't know what to call this - pulao or fried rice. So decided to call it simple vegetable rice, cuz.. well.. that's what it is - simple rice dish with veggies.


It was Saturday, a break after a hectic week. I had carrots and beans in the fridge, and a packet of frozen peas. Was too tired to go grocery shopping so decided to make do with rice with vegetables in it. Simple and nutritious lunch.
What I Used:
Basmati Rice - 1 cup
Carrots - 2
Beans - 8-10
Peas - 1/4 cup
Onion - 1 medium
Ginger garlic paste - 1 tbsp
Chicken masala (werid, I know, but quite flavourful!) - 1 tsp
Jeera powder - 1/2 tsp
Pepper powder - 1tbsp
Salt - to taste

How I Made It:
1. Wash and drain the rice and soak in water for 30 mins.
2. Fry chopped onions and ginger garlic paste in oil, in the pressure cooker pan.
3. When onions turn transparent, add the chicken masala and jeera powder. Fry for another minute.
4. Add the vegetables and mix well. Then add the rice, salt and fry for 2 mins.
5. Add 1 cup water, wait for a whistle, remove cooker from fire and wait till the pressure leaves.
6. When warm itself, add the pepper powder and mix well.
This was easy and very flavourful. I had it with papad and raita.

  1. This is what I had last weekend. I was in no mood to cook an elaborate meal, so make my version of chicken curry rice. Same method. But it tasted good. I had pickles to accompany it too.

  5. Me too...go for milder forms variety rice while with lesser mood to cook...wont even take that extra effort to chop veggies...jus with grated carrots and peas :)..

  6. Pulao is such easy dish which welcomes all sorts of veggies, masalas and ingredients. It can be done with rich ingredients and so does it taste very good with only few...
    I love milder form when eating with veggie curries and will go for fiery spicy with NV! what about u?

  9. every weekends I get lazy and make something like this instead of rice subzi, dal etc. it works well and saves lot of time:) your version looks nice.
