Simple Vegetable Rice Recipe – Vegetable Rice Recipe

On most days, I end up making a simple vegetable rice recipe which is mixed rice with some vegetables and minimum spices. It’s an easy one pot meal option for bachelors (and bachelorettes like me) who don’t want to spent too much time in the kitchen or don’t have fancy equipment to cook with. This recipe is a standard one I use on most weekends with minimum variations. You may also like my pressure cooker vegetable pulao, simple veg pulao recipe, and egg fried rice recipe.

It was Saturday, a break after a hectic week. I had carrots and beans in the fridge, and a packet of frozen peas. Was too tired to go grocery shopping so decided to make do with rice with vegetables in it. When you are a bit tight on time, putting together some rice and vegetables in the pressure cooker is the simplest way to get a meal on the table. Buying frozen vegetables is a great way to ensure that you always have some vegetables in hand to throw together this vegetable rice but if you are averse to using frozen vegetables in general, then you can buy fresh vegetables and chop them up before freezing them in ziplock bags or airtight containers. I often do this with vegetables that we only need in smaller quantities (like celery, or kaffir lime leaves), or curry leaves which I can only get fresh when I get to the Indian store every month or so.

So let’s check out how to prepare a simple vegetable rice with whatever vegetables you have lying around in your fridge. A great way to use up leftovers and also get a nutritious meal for you and your family.

Simple Vegetable Rice Recipe

Ingredients:
Basmati Rice – 1 cup
Carrots – 2
Beans – 8-10
Peas – 1/4 cup
Onion – 1 medium
Ginger garlic paste – 1 tsp
Garam masala – 1 tsp
Cumin powder – 1/2 tsp
Pepper powder – 1tbsp
Salt – to taste

How to Make Vegetable Rice:
1. Wash and drain the rice and soak in water for 30 mins.
2. Fry chopped onions and ginger garlic paste in oil, in the pressure cooker pan.
3. When onions turn transparent, add the garam masala and cumin powder. Fry for another minute.
4. Add the vegetables and mix well. Then add the rice, salt and fry for 2 mins.
5. Add 1 cup water, wait for a whistle (5-6 mins), remove pressure cooker from fire and wait till the pressure leaves.
6. When warm itself, add the pepper powder and mix well.

This vegetable rice is easy and very flavourful. I had it with papad and raita.

    ok..i need quick help…want great recipe suitable for diabetic …no, its not for me…iam still very young (yeah, rite!)..treat this as an emergency..shukran ( thanks in arabic..its the ramadan, it makes me a lil arabic)
