Aloo masala sandwiches or potato masala sandwiches are fabulous as an evening snack with some hot tea. The filling is spiced mashed potatoes and it's slathered on bread slices before toasting up crisp.
Recipe type: Snacks
Cuisine: Indian
Serves: 8 sandwiches
  • 8 slices of bread, any kind you prefer
  • 2 cups of boiled and mashed potatoes
  • ¼ tsp of red chilli powder
  • ¼ cup of finely chopped onions
  • ¼ tsp of turmeric powder
  • ½ tsp of roasted cumin, powdered
  • 1 tsp of lime juice
  • 3 tbsp of finely chopped coriander leaves
  • 4 tbsp of butter, preferably salted, at room temperature
  • Salt to taste
  1. Place the mashed potatoes in a bowl
  2. Add all other ingredients (except bread and butter) to this and mix well
  3. Taste test this mixture to make sure you are happy with the spice, sourness, and salt levels
  4. Remove the crust from the bread slices, if you'd like
  5. Take one slice and butter a side generously
  6. Place about 2 tbsp (or more) of the aloo masala on the buttered bread slice
  7. Cover with another slice and butter the top of this slice
  8. Heat up your griddle or tawa
  9. Place the sandwich, buttered side down on the heated pan
  10. Butter the other side now
  11. Press down gently with a spatula and grill the sandwich until both sides are crispy and golden brown
  12. Cut the sandwiches diagonally and serve warm with Sriracha chilli sauce (our favourite) or tomato ketchup
