Easy Broccoli Soup Recipe – Broccoli Soup (NO CREAM)

Broccoli is very expensive in India so I have never cooked with this vegetable before. Its very widely available in Singapore and priced pretty much like any other vegetable so I bought some the other day. The only problem was, I didn’t know what to make with it. Ignoring TH’s comment to “cook it like you do with cauliflower, maybe Aloo Broccoli?” I started searching around for a good soup recipe since I was sure I had come across some nice ones before.

Finally zeroed in on this very easy Broccoli Soup Recipe from BBC – Food (the link to recipe is no longer working). Some people don’t like the flavour of broccoli and prefer to avoid and you would think this Broccoli Soup has a strong flavour of broccoli but it actually doesn’t. I encourage you to try it even if you are a broccoli-disliker, this soup may just win you over.


BROCCOLI SOUP RECIPE
Serves 4


Ingredients:
Broccoli – 2 cups, chopped (discard the thicker part of the stem
Vegetable stock – 4 cups
Garlic – 3 to 4 cloves, chopped
Olive oil – 1 tbsp
Salt and pepper – to taste (freshly ground pepper makes a lot of difference to the taste)

How to Make Broccoli Soup
1. Heat the oil in a pan and saute the garlic till it turns a light brown at the edges.

2. Add the stock and the broccoli, bring to boil and simmer for 25-30 minutes. The broccoli should be cooked at this point.

3. Blend in a mixie / blender and serve hot with some salt and pepper.

    every body who cooks broccoli says its similar to cauliflower,yet I have not yet tried,should try since its too good for kids….:)

    i love brocolli soup…and this is pretty much teh way i made it…

    nags, do u get this veg stock in NTUC fairprice? and what brand…

    i make my stock from scratch but this seems a quicker option…

    Suma – I got it from Cold Storage. Its a company called BG, a red can like Milkmaid (which I struggled with my knife to open cuz I don’t have a can opener yet!) It was nice and thick-ish and has no added salt. I had to add salt to the soup and 1 can served both me and TH.

    Broccoli is my kids’ especially Agastuya’s favourite veggie :-)your hubby’s right…try to make it like aloo gobi…I make a mixed vegetable with broccoli, carrots and potatoes and it’s one of our favourites…your soup looks nice too. We also have it just steamed.

    broccoli almond soups are a rage at fancy weddings in my hometown in India…tried to replicate its taste but failed miserably…since then i just stick to the ones available on menu in the cafes.

    The original recipe called for some cream to be added in the end. I avoided it since I am not a huge fan of creamy soups except maybe as an appetizer. This was our dinner, with some crackers and toasted bread so I made it light and we had lots! 🙂

    Cheese is definitely another great option. The recipe is versatile enough for you to customize it as you want!

    I like to add cheese to my broccoli soup, and cream cheese is the best for making it creamy in my opinion. For a nice flavor though, cheddar wins hands down.

    I love broccoli soup and I love the little flecks of green in yours.. but Aloo Broccoli tastes pretty good too 🙂 I also make broccoli poricha kootu, oven roasted broccoli or a broccoli poriyal… so there are a lot of options.

    I usually do what your hubby suggested – use broccoli as a substitute for cauliflower. I tried making soup out of it once, and ended up not liking it.
