Recipe for Bhindi Fry
As I had mentioned before, TH and I are not huge fans of Okra (Vendakka/ladies finger. But I feel guilty if I leave out any vegetable completely (except for Pavakka/Karela!) so I bought it the other day just to try and make something different. This is a spontaneous recipe that happened just like that and it came out really well, so much so that TH didn’t even realise it was Okra 🙂 And its really simple too, using minimum ingredients.

Fried Okra with Besan
Serves 2
Ingredients for Bhindi Fry:
Okra / Vendakka / Ladies finger – 10 nos
Besan / chickpeas flour – 3 tbsp
Chilli powder – 1 tsp
Turmeric – a pinch
Hing – 1/4 tsp
Jeera – 1/2 tsp
Salt – to taste
Oil
How to Make Okra Besan Fry:
1. Mix the besan with chilli, turmeric, hing, jeera and salt. Add enough water to make a thick batter.
2. Cut the okra into thin discs and add to the besan batter.
3. Heat about 2 tbsp oil in a non-stick pan and add this mixture. Keep stirring occasionally until it starts separating into small bits and the okra is cooked.
The final dish was soft and spicy with a sweet tinge. We loved it!
This was our lunch today, such a uniquely delicious way to eat our favorite vegetable, thank you

Hiya.. I tried this out over the weekend and we liked it. Was a change from my usual bhindi fry. Only change is next time i’ll MW the bhindi slices before tossing them into the batter. Thanks for a tasty, easy recipe.

Seena – same old camera but new techniques i am learning in photoshop. not perfect yet, and u will see that if you look close enough 🙂
This looks wonderful. Okra is one of my favorite vegetables and I love to find new ways to prepare it.

Looks very interesting,I have never seen okra made quite this way…….looks yummy !
Nags this is beautiful I am drooling imagining the taste.
Oh, I love this. I’m going to try this. And you know what? I will post a Bhindi recipe sometime soon, and its yummy, its Bharwan bhindi of course! So, Bhindi is not that bad ya!
My mom fed me Bhindi all my life coz I was bad at Maths. It certainly did nothing! 😀
Nags, that is a lovely recipe 🙂
This dish reminds me of a dish called matvadi palya (and I have posted it a long time ago) where we make bhajis with besan. Normally use dill leaves or cluster beans. Love the look & texture of your okra besan.
For me any veggie with besan is heaven. I have tried this but mine remains a little sticky towards the end…your look the right thing!
Looking at those fresh Okra is a pleasure for me Nags, delicious dish!:)
That’s a beautiful shot of the veggies. And I’ve never come across this dish before.
I tried installing the comment box like this but tho’ Blogger didn’t give me any error messages, it didn’t accept the new code either 🙁
Sra, I installed it from jackbook.com. You can try it too 🙂
Hi Nags, this is one of the other recipes that makes Okra non-slimy!:-) Really wonderful that TH didn’t recognize, and I am sure it tasted really good too. The pictures are so beautiful.
looks beautiful!
the before and after transformation looks so welcoming…..
I have a dumb question: when you say “10 nos,” does that mean 10 individual okra pods?
Thanks,
-andrew
Hmm i make Cilantro Besan, Beet root besan, Aloo besan.. but never made Okra besan.. should give it a try dear
Hello Andrew, that’s not a dumb question at all, and yes I mean 10 individual okras. I try to avoid weight when it comes to veggies cuz its easier to just count them out. Of course, this is just what I used and is totally customizsable according to personal taste. Thanks for confirming 🙂
that sounds interesting!
