Thai Fried Rice Recipe

I try recipes from The Recipe Diary on and off because, really, there are some awesome submissions in there. This was one such recipe that I bookmarked as soon as I saw it and realised there's a reason why people have rated it excellent.

I have made this twice already with every intention to make it again when we have company. Its a great recipe you can use to show off because its not a run-of-the-mill ordinary fried rice recipe that I usually use. Thanks Sree, for a lovely recipe that's surely a keeper.

  15. your earlier fried tofu in PB sauce made me fry the tofu for the first time...never had fried it before , but i have yet to try the PB sauce recipe....made a lemony tofu which i am yet o post but this fried rice seems delicious...but why it need to fry the tofu.........not fair to post all these yummy high cal recipes....lol...my wt. fluctuated even by looking at it..

  17. sangeeta - fried tofu is still better than a lot of other stuff we put in our mouth. you'd be surprised :) actually, you can try this without frying the tofu too.

  18. Nags, just checked your comment. About the tear shape of Naan, roll the dough into round first and pull one side until you get the tear shape.
    About chewiness, most probably the type of flour we use. I get the best southern flour here and also bread flour works better too. Could be the temp of the oven too, varies in diff ovens. You could turn up the heat to the max and try. Foil also makes the temp to keep high and also helps to heat up the tray in the oven first and slap on the naans or bake for a longer time than I have given if cold tray is used. I heat up a pizza stone which is the best.
    Any bread made of purely plain flour tastes best right out of the oven, do tend to get chewy if butter is not used. Yeats breads are usually soft even after a while but must make sure yeast is fresh, not old.
