As I had mentioned before, TH and I are not huge fans of Okra (Vendakka/ladies finger. But I feel guilty if I leave out any vegetable completely (except for Pavakka/Karela!) so I bought it the other day just to try and make something different. This is a spontaneous recipe that happened just like that and it came out really well, so much so that TH didn't even realise it was Okra :) And its really simple too, using minimum ingredients.
What I Used:
Serves 2
Okra/Vendakka/Ladies finger - 10 nos
Besan/chickpeas flour - 3 tbsp
Chilli powder - 1 tsp
Turmeric - a pinch
Hing - 1/4 tsp
Jeera - 1/2 tsp
Salt - to taste
Oil
How I Made It:
1. Mix the besan with chilli, turmeric, hing, jeera and salt. Add enough water to make a thick batter.
2. Cut the okra into thin discs and add to the besan batter.
3. Heat about 2 tbsp oil in a non-stick pan and add this mixture. Keep stirring occasionally until it starts separating into small bits and the okra is cooked.

The final dish was soft and spicy with a sweet tinge. We loved it!

Hi Nags, this is one of the other recipes that makes Okra non-slimy!:-) Really wonderful that TH didn't recognize, and I am sure it tasted really good too. The pictures are so beautiful.
Hello Andrew, that's not a dumb question at all, and yes I mean 10 individual okras. I try to avoid weight when it comes to veggies cuz its easier to just count them out. Of course, this is just what I used and is totally customizsable according to personal taste. Thanks for confirming :)

For me any veggie with besan is heaven. I have tried this but mine remains a little sticky towards the end...your look the right thing!
This dish reminds me of a dish called matvadi palya (and I have posted it a long time ago) where we make bhajis with besan. Normally use dill leaves or cluster beans. Love the look & texture of your okra besan.

nags..loved the pics...so bright and crisp...and coming to okra..i think cutting it that thin helps..yet! i give you full points on trying it...i never try veggies i do not like...and do not make them even if jeeves likes it..unless i am on a diet ;)
oh thanks for this post, it reminded me so much of my childhood. My dad used to cook okra once a week LOL, too bad I cant eat them as much as I want..too hard to find them here in France :-(

Hiya.. I tried this out over the weekend and we liked it. Was a change from my usual bhindi fry. Only change is next time i'll MW the bhindi slices before tossing them into the batter. Thanks for a tasty, easy recipe.
